What is kombucha?

Pure Booch kombucha is an authentically slow brewed, naturally sparkling soft drink, but what actually is kombucha? We've taken a look at some of the characteristics that make kombucha, and Pure Booch special.

Fermented tea & the origins

Kombucha is an ancient fermented, naturally sparkling soft drink that's full of live cultures, and origins from East Asia & Japan over 2000 years ago. Kombucha is also sought after as a lower sugar, healthier alternative to traditional soft drinks and mixers, for those seeking a healthier lifestyle.

The SCOBY & ingredients

The basic ingredients are yeast, sugar, tea, and a SCOBY (Symbiotic Culture Of Bacteria and Yeast - basically the amazing bacteria!). It's fermented, during which time the bacteria feeds on the sugar and multiplies. 

Acids and a small amount of alcohol also form (which is why kombucha is a great alternative to alcoholic drinks!) 

The brewing process

At Pure Booch, firstly we brew a sweet tea using a mixture of ethically and sustainably grown green and black tea leaves, sugar, and water. We then add in or SCOBY (Symbiotic Culture of Bacteria and Yeast) which is 8 years in the making and where the magic starts to happen. Our kombucha then ferments and brews for 30 days which gives it the natural fizz and delicious flavour, before going through vigorous testing. We can and bottle our finished Booch on site at our Birmingham base using environmentally conscious packing, and keep it chilled so it’s in the perfect condition for you to enjoy.
