Kombucha and it's origins

Kombucha is a fermented tea that has a long and storied history. It is believed to have originated in China over 2,000 years ago, where it was used as a health tonic and consumed by emperors and other members of the royal court. From China, kombucha spread to other parts of Asia and eventually made its way to Europe, where it gained popularity as a health drink. Now, kombucha is enjoyed all around the world, with people drawn to its unique taste and potential health benefits. 

How Kombucha is made

Kombucha is made by combining a SCOBY (symbiotic culture of bacteria and yeast) with a sweetened tea solution and letting it ferment for a week or more. The result is a carbonated, slightly sour, and very refreshing drink that is full of live cultures, antioxidants, enzymes, and amino acids, to name a just a few benefits.

By fermenting our kombucha for longer periods of time, under specific conditions, we are able to create a product that is not only delicious but also rich in beneficial compounds. 

Our slow brew process begins by selecting the highest quality, ethically and sustainably sourced, organic teas and sugars. Then, we add our proprietary SCOBY, which genealogically is the daughter of the original SCOBY we produced 9 years ago and allow the kombucha to ferment in small batches. This slow and controlled fermentation lets the SCOBY fully break down the sugars and produces a kombucha that is naturally low in sugar, and rich in beneficial compounds, such as live cultures, antioxidants, enzymes and more.
